cracklin' coconut curry





last night i made a cracklin' coconut curry. we rendered the leaf lard and i put all the cracklins in this curry right after. totally unplanned. i had made rice, and jana and i were both feeling overdosed on meat, so took the occasion to use the head of cauliflower and some of the other vegetables in the drawers. a great success of the curry was that it did not become overcooked or too soggy, which is the most common problem i have with wet stir-fries. i think it had to do with the right level of heat and the amount of stirring i did. the flavor was boosted by all the fats!





green leaf kale rounded out the plate.







with the beef stock simmering and everything else the kitchen felt really good that evening.
